John Sheaves will discuss the best of Local Food Tourism and how it can enhance the visitor experience. John brings with him a background rooted in the countryside having farmed himself for 15 years and for the past 12 years has headed up Taste of the West. Delegates can share the spirit that is The Lakes Distillery (a top ten visitor attraction in The Lake District with an award winning bistro who pride themselves as being a producer with provenance) with Katie Read; with insights into the people, place and passion that are making whisky history. Beth MacLeod from Knockderry Country House Hotel will be taking us on her personal food and drink journey. With no experience of hospitality – a poor cook (in her own words) and no idea of how to renovate a crumbling old country house. Find out how Beth and her husband set about the chaotic, sometimes frightening and yet ultimately inspiring experience of running a small hotel on the west coast of Scotland with the aim to provide an authentic Scottish welcome. There may also be the chance to hear some truly innovative and unique food and drink experiences ie a pig tour guide and how a labour of love that is passed from generation to generation can create a unique product that attracts tourists from all over the world.
